Bringing up vegetarian kids can be tough. A parent will need to make sure that their children have enough dairy and protein in their diet. Even if your child is not vegetarian but you would like him or her to eat more veggies you should make these recipes for vegetarian youngsters.

Not just healthy, they are tasty and fun to make too.

Vegetable curry - This can be made by chopping some potatoes, carrots, pumpkin, aubergine and zucchini into bite-size pieces and boiling them in coconut milk with curry paste. This healthy dish is a great way to get your kids used to spices. Make the curry mild at first and then make it hotter as your children get used to it.

Spinach ravioli - You can choose to make these yourself or simply buy the pre-made stuff. Involve your children when make these and you can incorporate counting games and place bets on how many they will eat. Ravioli can also be filled with cheese or mushrooms. Pour over a home-made tomato sauce with some Parmesan cheese and you have a sure-fire way to ensure your kids will spinach!

Vegetable quesadillas - Incredibly quick and simple to make; fill two tortillas with cheese and green and red peppers, then grill on a grill pan, under a grill or simply toast in the toaster until the cheese melts and the concoction sticks together. A home-made salsa of onions, cilantro and tomatoes can be served with this. Finish by pouring over some sour cream and your kids will have a tasty colourful meal.

Grilled vegetable sandwich - First marinate, onions, tomatoes, peppers, courgettes and aubergines in some balsamic vinegar and olive oil. Season with salt and pepper and then grill the vegetables on a griddle pan or cook in the oven. When they are done ladle them on some toasted whole-wheat bread or Italian herb bread. Serve with some fresh home-made French fries and you have a healthy lunch recipe.
